DirectionsPreheat electric griddle or stove top griddle to 350°F (176°C), coat lightly with cooking spray or butter. Slice one apple into thin slices, toss in lemon juice and ¼ cup water. Set aside. Dice second apple into small pieces. Combine cinnamon, apple sauce and diced apple. Set aside. In a bowl combine egg, ¾ cup water and oil; whisk until combined. Add Kinnikinnick Pancake and Waffle Mix, whisk until combined. Fold in apple cinnamon mixture, mix just until combined. Drop batter onto preheated cooking surface. Flip pancake when edges begin to curl and top bubbles (keep warm in oven). In a small skillet, sauté prepared sliced apples until soft and water has evaporated (approx. 3-5 minutes over medium heat). Top prepared pancakes with apple slices and drizzle with caramel sauce or homemade syrup. Makes 12 Pancakes.
