Ingredients
3 individual Kinnikinnick Traditional English Muffins (177 g) 2 tbsp olive oil (30 g) ½ cup pizza sauce (gluten-free) (102 g) 9 cherry tomatoes - halved (99 g) ¼ small bell pepper - thinly sliced (45 g) 3 red onion rings - sliced thin/halved (30 g) 12 small bocconcini mozzarella balls - break into pieces (360 g) Optional: garnish with fresh parsley

Directions
- Preheat oven to 400°F (204°C).
- Place Kinnikinnick Traditional English Muffins (crumb side up) on a baking tray. Drizzle with olive oil.
- Toast in preheated oven for 5 - 7 minutes (crumb should be browned and crispy).
- Remove from oven and divide pizza sauce between Kinnikinnick Traditional English Muffins. Spread pizza sauce with the back of a spoon.
- Top each half Traditional English Muffin Veggie Pizza with broken pieces of bocconcini, 3 tomato halves, diced pepper and red onion slices.
- Return to oven until cheese is melted and golden brown (approx. 3 - 5 minutes).
- Remove from oven and garnish with optional fresh parsley. Serve warm.
