Ingredients
Salted Caramel Sauce
1½ cups granulated sugar (336 g) 1½ tsp coarse sea salt (7 g) ½ cup water (120 g) ½ cup 33% cream (115 g) 1 tbsp salted butter (15 g) ½ tsp pure vanilla extract (2 g)

Apple Filling
4 large Ambrosia apples – peeled/cored/sliced thin (500 g) 1 tbsp lemon juice (13 g) 1 tsp ground cinnamon (2 g) 2 tbsp cornstarch (30 g) ⅓ cup Salted Caramel Sauce - prepared (98 g) 1 package Kinnikinnick Pie Crusts - 2 crusts (390 g) 2 tbsp olive oil (30 g)

Directions
Salted Caramel Sauce
- In a medium saucepan, combine water, sugar and salt. Bring to a boil over medium heat stirring occasionally until sugar has dissolved and comes to a boil.
- Continue to cook over medium heat until sugar mixture is a light amber in colour. Swirl pot occasionally during this stage. Do not stir (approx. 20 minutes).
- Remove from heat. Add cream, butter and vanilla (mixture will bubble and double in size then settle).
- Once mixture begins to settle, stir just until combined.
- Let cool.
Apple Filling
- In a medium bowl, toss prepared apples in lemon juice. Let sit for 10 minutes.
- Mix cornstarch and cinnamon together. Coat prepared apples with mixture.
- Mix in ⅓ cup prepared Salted Caramel Sauce. Set aside.
Assembly
- Preheat oven to 375°F (190°C).
- To thaw pie crusts - remove from freezer and let thaw in foils for 30 minutes.
- Prick bases of thawed pie crusts with a fork to avoid air pockets.
- Fill two Kinnikinnick Pie Crusts with Apple Filling.
- Using an offset or knife, carefully fold edges of pie crust towards centre (approx. 2½ inches in).
- Brush sides with oil.
- Place filled crusts on a baking tray.
- Bake in preheated oven for 40 minutes.
- Remove from oven. Let cool for 30 minutes.
- Drizzle with Salted Caramel Sauce and serve warm.
Yields 2 Galettes
