Ingredients
2 tbsp olive oil (30 g) 1 small onion - chopped (85 g) 2 garlic cloves - minced (7 g) 1 jalapeno - seeds removed/cored/minced (14 g) 1 cup milk 2% (240 g) 450 g processed cheese (gluten-free) 247 g Monterey Jack cheese - shredded 2 roma tomatoes - diced (136 g) 1 tsp cumin (2 g) 1 tsp onion powder (2 g) 1 tsp black pepper (2 g) ¼ cup fresh cilantro - finely chopped (4 g)

Directions
- In a medium pot, heat olive oil. Sauté onion, garlic and jalapeno until tender over medium-low heat.
- Add milk and both cheeses. Cook over medium heat stirring continually until cheese is melted and smooth (approx. 15 - 20 minutes).
- Add diced tomatoes, spices and cilantro. Cook for 5 minutes over low heat stirring continually until combined.
- Remove from heat and serve with your favourite dippers. Best served warm.
Tips & Variations
- In Canada you'll need to look for processed cheese (solid block not slices). In the USA it is referred to as American Cheese.
