Ingredients
12 large eggs (672 g)
⅓ cup mayonnaise (80 g)
1 tsp paprika (1 g)
1 tsp Dijon mustard (5 g)
½ tsp salt (2 g)
1 tsp black pepper (2 g)
4 g chives (approx. 24 pcs)

Directions
Hard Boiled Eggs
- In a saucepan, submerge eggs in water.
- Turn heat to high and bring to boil.
- Reduce heat to medium-low and cook for an additional 15 minutes.
- Remove from heat and run under cold water for 3 minutes.
- Remove Hard Boiled Eggs shells and rinse Hard Boiled Egg under water (to remove any remaining shell).
- Gently dry Hard Boiled Eggs with paper towel.
Egg Filling
- Slice Hard Boiled Eggs in half lengthwise. Carefully scoop out yolk.
- Place emptied egg whites on serving dish. Set aside.
- In a medium bowl mash yolks with a fork until fine crumbs.
- Add mayonnaise, salt, pepper and Dijon mustard. Mix together until smooth.
Assembly
- Pipe filling into egg whites in a lengthwise line.
- Place one piece of chive across the centre lengthwise. Place 3 - 4 smaller pieces of chives widthwise to resemble football laces.
Tips & Variations
- Deviled eggs can be stored up to 2 days in the refrigerator.
