Ingredients
4 large eggs (224 g)
¼ cup mayonnaise (60 g)
1 tsp paprika (1 g)
½ tsp salt (2 g)
1 tsp black pepper (2 g)
6 radishes sliced - 1/8” thick (27 g)
Optional: dill for garnish

Directions
Radish Slices
- Slice radishes 1/8” thick. Keep crisp by soaking in water until ready to use. Refrigerate until assembly stage.
Hard Boiled Eggs
- In a saucepan, submerge eggs in water.
- Turn heat to high and bring to boil.
- Reduce heat to medium-low and cook for an additional 15 minutes.
- Remove from heat and run under cold water for 3 minutes.
- Remove Hard Boiled Eggs shells and rinse Hard Boiled Egg under water (to remove any remaining shell).
- Gently dry Hard Boiled Eggs with paper towel.
Egg Filling
- In a medium bowl, mash hard Boiled Eggs with a potato masher or fork until crumbly.
- Add mayonnaise, salt and pepper. Mix together until smooth.
Assembly
- Dry Radish Slices and place on serving dish.
- Pipe or scoop Egg Filling on top of Radish Slice.
- Sprinkle with paprika and garnish with optional dill sprig.
Tips & Variations
- For best results, pipe Egg Filling on Radish Slice no more than 4 hours before serving.
