Ingredients
1 package Kinnikinnick Pancake and Waffle Mix (454 g) ½ tsp baking soda (2 g) ½ cup butter (113 g) ¼ cup granulated sugar (50 g) 2 large eggs (112 g) 1 tbsp vanilla extract (5 g) 1 tsp cinnamon (5 g) ¼ cup pumpkin seeds - reserve 1 tbsp (32 g) ¾ cup apple sauce - unsweetened (205 g) 2 cups dates - soaked/drained/chopped (260 g)
½ cup raisins (77 g)

Directions
- Preheat oven to 350°F (176°C). Lightly spray a loaf pan.
- In a medium bowl, combine Kinnikinnick Pancake and Waffle Mix, cinnamon, and baking soda. Set aside.
- In a separate bowl, cream butter, vanilla and sugar until light and fluffy. Add eggs one at a time, mixing after each addition. Slowly add dry mix alternating with applesauce, mix after each addition until fully incorporated.
- Fold in dates and raisins. Mix until incorporated.
- Pour batter into prepared loaf pan. Top with reserved 1 tablespoon of pumpkin seeds.
- Bake in preheated oven for 60 - 65 minutes (check for doneness - loaf will spring back to the touch).
