DirectionsIn a medium bowl, sift together cocoa powder and icing sugar. Set aside. In a separate bowl, mix margarine until smooth; slowly add in sifted icing sugar mixture 1 cup at a time alternating with dairy free beverage. Mix until smooth and incorporated. Add vanilla extract and mix until combined. Assembly: Pipe a swirl of prepared butter cream icing on top of cupcakes. Yields 18 cupcakes
