Ingredients
1 loaf Kinnikinnick Whole Grain Bread (504 g) 3 tbsp olive oil - reserve 2 tbsp (45 g) 1 large sweet onion - finely chopped (405 g) 2 garlic cloves - minced (14 g) 1 cup 33% cream (222 g) 2 tbsp Kinnikinnick All Purpose Flour Blend (30 g) 1 stem fresh rosemary - stem removed/finely chopped) (1 g) ½ tsp salt (2 g) 1 portabella mushroom top- stem removed/finely chopped (95 g) ½ tsp pepper (1 g) 190 g brie - rind partially removed/cut into 36 pieces

Directions
Filling
- Sauté portabella mushroom in 1 tablespoon olive oil. Set aside.
- Using same frying pan, sauté chopped onion and garlic in 1 tablespoon reserved olive oil until tender and caramelized (approx. 10 minutes).
- Add sautéed mushrooms, salt, pepper and fresh rosemary.
- Slowly add Kinnikinnick All Purpose Flour Blend to onion mixture stirring constantly.
- Stir in cream and continue stirring until thickened (approx. 3 - 5 minutes).
- Continue to cook for an additional 3 - 5 minutes. Remove from heat and set aside.
Toast Cups
- Preheat oven to 375°F. Lightly spray mini muffin tin with cooking spray.
- With a rolling pin, carefully flatten slices of Kinnikinnick Whole Grain Bread.
- Cut each slice into two circles.
- Form into muffin tin and drizzle with reserved 1 tablespoon olive oil.
- Bake in preheated oven for 10 - 12 minutes.
Assembly
- Reduce oven temperature to 325°F (162 °C).
- Place a piece of brie in the base of each warm Toast Cup.
- Fill each Toast Cup with with onion mixture.
- Return to oven and bake for 7 - 10 minutes or until brie has melted. Serve warm.
