Ingredients
1 package Kinnikinnick Original Waffles - thawed (222 g) 2 large eggs (112 g) ½ tsp salt (2 g) 1 tsp black pepper (2 g) 1 green onion - chopped (15 g) ¼ cup pickled jalapenos or fresh (30 g) 1 sweet mini pepper - seeds removed/sliced in rings (30 g) 15 mini tomatoes - cut in half (125 g) 1 radish - sliced thin (30 g) Optional: add cheese and garnish with fresh parsley

Directions
- Preheat oven to 350 °F (176 °C).
- Cut thawed waffles into 8 triangle pieces per waffle for a total of 48 pieces.
- Line a small baking tray with parchment paper. Layer bottom with chopped waffles.
- Top with jalapenos, mini pepper, green onion and tomatoes.
- Crack 2 eggs carefully on top of waffles. Season eggs with salt and pepper.
- If using cheese, sprinkle on top.
- Bake in preheated oven for 15 - 20 minutes until egg whites are cooked.
- Remove from oven and garnish with radish slices.
- Drizzle with dressing or syrup.
