Ingredients
1 package Kinnikinnick Pancake and Waffle Mix (454 g) ½ tsp baking soda (3 g) ½ cup butter - softened (125 g) ½ cup granulated sugar (117 g) 2 large eggs (112 g) 1 tbsp vanilla extract (6 g) 2 cups mashed bananas (approx. 6 - 7) (528 g)

Directions
- Preheat oven to 350°F (176°C). Lightly spray a loaf pan.
- In a medium bowl, cream butter, vanilla and sugar until light and fluffy.
- Add eggs one at a time, mixing after each addition.
- Fold in mashed bananas.
- Slowly add Kinnikinnick Pancake and Waffle Mix and baking soda to creamed mixture. Mix until fully incorporated.
- Pour batter into loaf pan.
- Bake in preheated oven for 70 - 75 minutes (check for doneness - loaf will spring back when touched lightly on the top).
- Remove from oven and let loaf cool slightly prior to inverting pan. Carefully remove pan and let cool completely before serving.
Yields 1 loaf
Tips & Variations
- For best results, use frozen ripe bananas (thawed).
