Ingredients
6 large eggs - hard boiled (336 g) ⅓ cup mayonnaise (80 g) 1 tsp paprika (1 g) ½ tsp salt (2 g) 1 tsp black pepper (2 g) 6 small radishes – thinly sliced (27 g) ¼ cup cucumber – thinly sliced (26 g) 1 package Kinnikinnick Hot Dog Buns - 4 buns (285 g)
1 tbsp olive oil (15 g) Optional: garnish with alpha sprouts or pea shoots

Directions
Crostini
- Preheat oven to 375°F (190°C).
- Slice Kinnikinnick Hot Dog Buns lengthwise into 4 slices per bun. Place cut pieces on baking tray and drizzle with olive oil.
- Bake in preheated oven for 7 - 10 minutes or until desired crispness turning once during baking. Set aside.
Deviled Egg Spread
- Crack boiled eggs and carefully peel off shell. Rinse peeled egg to ensure no shell has been left behind. Gently dry with paper towel.
- Slice boiled eggs in half and separate yolks and egg white.
- In a medium bowl, mash 4 egg yolks and 2 whole eggs with a potato masher or fork until crumbly.
- Add mayonnaise, salt, and pepper. Mix together until combined.
- Dice remaining 4 egg whites into ¼” pieces. Set aside for topping.
Assembly
- Spread egg filling on crostini.
- Top with cucumber slices, radish slices, diced egg whites and sprinkle with paprika.
- Garnish with pea shoots or sprouts.
Yields 16 crostini
Tips & Variations
- For best results, assemble crostini no more than 1 hour prior to serving.
- Deviled egg spread can be made ahead. Cover tightly in refrigerator until ready to use.
