Ingredients
3 individual Kinnikinnick Traditional English Muffins (177 g) 1 tbsp olive oil (15 g) 18 cherry tomatoes - assorted colour/sliced in half (217 g) ½ tsp salt (2 g) 1 tsp black pepper (2 g) 1 large firm avocado - skinned and pit removed/cut into thin slices (165 g) 1 tbsp fresh lemon juice (12 g) 12 small bocconcini mozzarella balls - break into pieces (360 g) Optional: garnish with fresh basil

Directions
- Preheat oven to 400°F (212°C).
- Place Kinnikinnick Traditional English Muffins on a foil lined baking tray.
- Toss tomato slices and optional basil in olive oil, salt and pepper. Set aside.
- Drizzle sliced avocado with lemon juice. Set aside.
- Break bocconcini into small pieces and place on top of 6 halved Kinnikinnick Traditional English Muffins.
- Bake in preheated oven for 5 - 7 minutes until tops are crisp and cheese is melted.
- Remove from oven and garnish with sliced avocado, tomato and optional fresh basil.
